Selective desaturation is done in post processing, and provided that I know can not be done on any Camera. That said, this is a much overused technique (which everyone, including myself, is guilty of), so I would not worry too much about finding a camera that can do so explicitly. If you were still interested in doing so, Adobe Lightroom breaks the color into 8 or 9 different channels and you can adjust the color saturation and lightness channel independently, which means you can disable the saturation of all channels, except for green, for example. It would be anything not monotonous green.
